My partner created this recipe while I was off sick, using ingredients from the garden. We started growing courgettes and needed a new recipe to use up our bountiful harvest. We also had a great spinach harvest before the summer heat bolted the plants. The tomatoes weren't fresh from the garden on o

Crumble the tofu in a bowl.
Wash the courgettes, spinach and cherry tomatoes. Cut the courgettes into half moons. Cut the cherry tomatoes in halves.
Heat some oil in the pan and once hot, add the scrambled tofu and spices. Mix well and fry for c. 5 minutes or until the tofu starts to have golden edges.
Add the courgette to the pan and fry with the tofu for 3-4 minutes until starting to soften.
Add in the spinach until it starts to wilt.
Add the cherry tomatoes and mix through. Heat everything through for another minute. Taste and add a little more salt and pepper if needed. Serve immediately while hot.
