Step 1

Chop the onions and mince the garlic using a garlic press.

Chop the peppers into bite-sized chunks.

Heat oil in a pan and once hot, add the onions and garlic. Fry on a medium heat until softened.

Wash the rice. Boil the rice in a pot with water for 19 minutes. Drain and keep aside.

Add the chopped peppers to the pan with onions and garlic. Fry for a few minutes.

Add the taco spices to the pan, stir well to coat the vegetables. Fry for a minute to release the flavour of the spices.

Add the full cans of beans (including juices) and chopped tomatoes. Stir well. Taste and adjust with salt and pepper as needed.

Lower the heat of the pan and let the chili simmer to heat up for c. 10 minutes.

Serve the chili with the rice as a side.
